PASTRY CREAM RECIPE

1 1/4 cups milk

3 egg yolks

1/4 cup granulated white sugar (varies for different flavours, see below)

3 tbsp all purpose flour

1 tbsp corn starch

1 tsp vanilla extract

mix egg yolks and sugar

add sifted flour and corn starch

set aside.

bring milk to a boil on medium heat, then take off heat

add hot milk in additions of a few tbsp at a time, to the egg/sugar/flour/corn starch mixture

whisk this mixture constantly to prevent cooking the egg yolks

when all hot milk has been added,

on medium heat, boil the mixture once more, whisking constantly

a few minutes into heating, mixture should begin to thicken, WATCH carefully

once the mixture starts to thicken, continue whisking till its like .. cream.

take off heat and cool.

add vanilla extract and mix a little bit.

refrigerate if not using.

finito!

flavours

liquor – 2 tbsp Bailey’s, added when the cream has formed.

banana – 1/2 ripe banana, pureed using food processor. (squirt some lemon juice before pureeing to prevent banana from oxidising into a brown mush.)
