SPONGE CAKE RECIPE

1/4 cup milk
2 tbsp unsalted butter
4 egg yolks, 4 egg whites (ie. separate 4 eggs)
1 cup granulated white sugar (varies for different flavours, see below)
1 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract

heat milk and add butter to it
whisk egg yolks and sugar until pale yellow and creamy
add milk/butter mixture to egg yolks and sugar
sift flour, baking powder, salt into the mixing bowl and fold into egg yolks and sugar
add vanilla extract
whisk egg whites to semi-stiff peaks and fold into mixture carefully
pour into baking tray and bake at 170°C for 25 minutes.

flavours (add before folding in egg whites so as to not deflate the cake later)banana and walnut – 1 ripe banana, pureed using food processor. (squirt some lemon juice before pureeing to prevent banana from oxidising into a brown mush.) and 1/2 cup chopped, roasted walnuts
